Green Spot Technologies has developed the world’s first range of low calorie fermented flours using waste products from the juice and beverage industries.
Every year the food and beverage industries produce several million tonnes of fruit and vegetable by-products, which usually end up in landfills. It is estimated that 15-50% of fruits and vegetables become by‐products when processed.
Green Spot converts these low-value by-products into high value food products. The sugars and plant polymers are turned into nutritious flours for human consumption. The flours are high in protein and dietary fibre, and low in sugars and fats. They are gluten-free and rich in vitamins, essential minerals and prebiotics.
The flours can be used to substitute existing flours or as a base material for food technologists to develop new products.
